The short version

Somewhere around the sixteenth century, Bhavamisra sat down to explain what happens to food after you swallow it, and reached for a picture every reader already knew: a clay pot of rice and water sitting over a fire. The fire is Jatharagni. The pot is the Amashaya. Something has to fan the fire, something has to wet the grain, and something has to hold the mixture in place long enough for it to cook. The Purva Khanda of the Bhavaprakasha names all of them: Samana Vayu at the coals, Kledaka Kapha in the water, Pachaka Pitta in the heat, and the Grahani as the floor of the pot. This article walks through those verses in order, in plain English, and explains what the classical term Agnimandya actually refers to inside that model.

There is a particular kind of pleasure in watching an old book explain something it cannot see. The author of the Bhavaprakasha had never looked inside a living stomach. He had no microscope, no way to measure what was happening chemically, no notion of a calorie. What he had was a kitchen, a long tradition of careful reading, and the willingness to say plainly that the process he was describing happened in stages, in a particular order, in particular places, driven by named agents.

So he described digestion as cooking. Not as a loose metaphor dropped in for colour, but as a working model he then used consistently: a vessel, a fire under it, water in the mix, a draught to keep the fire going, and a container below that receives what the cooking produces. Every part of that picture gets a Sanskrit name, and each name is doing a job.

The passage sits in the Purva Khanda, the first of the three great divisions of the Bhavaprakasha. It arrives just after the section on the body's tissues, and that placement is not accidental — Bhavamisra has just finished telling you what the body is made of, and now he has to answer the obvious follow-up question. If the body is made of seven tissues, and the tissues come from food, then what exactly happens to food?

Where the Dhatu Prakarana Ends: Asthi, Majja and the Chain to Shukra

The pages immediately before our passage close out the Dhatu Prakarana, the section on the body's structural tissues. Bhavamisra has been counting bones. He gives the tally region by region — nine in the neck, four in the passage of the throat, one in each jaw, thirty-two teeth, three in the nose, one at the palate, one at each ear, one at each brow, six in the head — and then sorts every bone in the body into five structural classes: taruna (the soft, cartilage-like ones), kapala (the flat plate-like ones), rucaka (the teeth), valaya (the curved ones) and nalaka (the long hollow ones, found in the limbs, the fingers and toes, the wrist).

Then comes a line that is worth pausing on, because it explains why the text bothered to count at all. The verse says that the flesh and the vessels and the ligaments are all bound onto the bones, which serve as their support, and that because of this the body does not collapse or fall apart. That is a structural claim, arrived at by dissection and reasoning, and it is correct.

From bone the text moves to Majja, marrow. Majja, it says, is what you get when Asthi is cooked by its own internal fire — the essence left behind by that cooking, sitting inside the thicker bones. And then the passage delivers the verse that the entire rest of our chapter depends on:

The dhatu chain — Bhavaprakasha, Purva Khanda

rasād raktaṁ tato māṁsaṁ māṁsān medaḥ prajāyate |
medaso'sthi tato majjā majjñaḥ śukrasya sambhavaḥ ||

"From Rasa comes Rakta; from that, Mamsa; from Mamsa is produced Meda; from Meda, Asthi; then Majja; and from Majja arises Shukra."

Seven tissues in a fixed order, each one made out of the one before it. Rasa (the nutrient fluid), Rakta (blood), Mamsa (muscle), Meda (fat), Asthi (bone), Majja (marrow), Shukra (the reproductive essence). What matters here is the direction of the argument. The chain starts at Rasa. And Rasa is not something the body manufactures out of nothing — Rasa is what food becomes. So the whole seven-storey building rests on one ground floor, and the ground floor is digestion. The text knows this, and a commentator immediately raises the obvious objection: if it takes a month for Rasa to become Shukra, and a month for Rasa to become Artava in women, then how does any of this actually work? What is the mechanism?

The answer Bhavamisra gives is our chapter. To explain the tissues, he has to explain the fire. Everything that follows is him going back to the beginning — to the mouth — and working forward.

Shadvidha Ahara: the Six Kinds of Food

Before he can describe what happens to food, Bhavamisra has to define what counts as food. His answer is a piece of classification so practical it could have been written by a caterer:

āhāryaṁ ṣaḍvidhaṁ bhojyaṁ bhakṣyaṁ carvyaṁ tathaiva ca |
lehyaṁ coṣyaṁ tathā peyaṁ ...

"What is taken in is of six kinds: Bhojya, Bhakshya, Charvya, Lehya, Choshya and Peya."

The commentary then gives an example of each, and the examples are the giveaway — this is a classification by how your mouth handles the thing, not by what it is made of:

It is easy to skim past this as a list. It is more interesting than that. A classification is a statement about what the author thinks matters, and this one says: the important variable is the physical form in which a substance arrives. A dense sweet and a thin drink may contain identical ingredients and still behave completely differently, because the pot receives them differently.

That instinct runs right through classical Ayurvedic dietetics. The Sushruta Samhita devotes Sutrasthana chapter 46, the Annapana Vidhi, to food and drink at enormous length. Vagbhata sorts foods by material group in the Ashtanga Hridaya, which we have covered in our articles on the Annasvarupa Vijnaniya classification of grains and pulses and on the Krtanna Varga of prepared foods. What Bhavamisra adds here is the sixfold cut by form, placed deliberately at the head of the digestion passage — because the next thing he is going to describe is a pot, and a pot cares about what you put into it.

Notice also that Lehya — the lickable, the spoonable semi-solid — is a category in its own right in this list. That is the classical format to which the preparations called avaleha belong. It is a form of preparation, and it has a name because the texts thought the form was worth naming.

Amashaya: Where the Bhavaprakasha Puts the Stomach

Having defined food, the text now needs a place to put it. It quotes Charaka directly:

The seat of the Amashaya — Charaka, quoted in the Bhavaprakasha

nābhi-stanāntare jantor āmāśayaṁ budhā viduḥ ||

"The wise know the Amashaya of a creature to lie between the navel and the breasts."

The commentary sharpens this with a measurement: the Amashaya extends about six angula (finger-breadths) upward from the navel toward the throat. That is an anatomical statement with a number attached, which is more than a lot of pre-modern physiology manages, and it is roughly right.

Then comes a passage that reads almost like a cross-section drawing rendered in words. The text stacks the trunk's compartments from top to bottom:

Read the fourth row again, because it is the load-bearing one. The fire gets its own compartment, placed below the food. That is exactly where you would put a fire if you were building a hearth. The model is being built with a builder's logic: vessel on top, flame underneath, and the whole thing arranged so heat rises into what needs cooking.

Whether the Agnyashaya maps onto any single modern structure is a question worth leaving open. What is not in doubt is that the text placed a heat-producing agency immediately beneath the stomach and made it a named anatomical region rather than a vague force. Prana Vayu Carries It In

Nothing in this system moves on its own. Movement in classical Ayurvedic physiology belongs to Vayu, and so the first agent named in the digestive sequence is Prana Vayu. The Bhavaprakasha quotes Sushruta:

so'nne praveśayaty annaṁ prāṇāṁś cāpy avalambate ||

"The Vayu called Prana, which sustains the body, travels to the mouth; it carries the food inward, and it also supports the vital breaths."

Two jobs in one verse: swallowing, and breathing. The text has noticed that the same region does both and assigned them to a single agent. It is a neat observation, and it is why the classical literature keeps eating and breathing so close together — they share a doorway.

Prana is the first of the five Vayus. The complete set, and the division of labour between them, is laid out in Ashtanga Hridaya Sutrasthana chapter 12, the Doshabhediya Adhyaya, which remains the standard reference for the fifteen functional subtypes of the three doshas. Kledaka Kapha and the Madhura Avastha

Food is now in the pot. Before anything can cook, it has to get wet and it has to come apart. The text names the agent responsible, and the name is a description:

Kledaka Kapha — Bhavaprakasha, Purva Khanda

kledana nāma kaphaḥ kledayati ... saṁhananaṁ bhinatti ca |

"The Kapha called Kledana moistens; and it breaks apart the compacted mass."

Kleda means wetness or moisture. Samhanana means a compacted, bound-together mass — a bolus. So Kledaka Kapha does two mechanical things: it soaks, and it disaggregates. Anyone who has tried to cook dry rice without adding water understands why this step has to come first and why the text puts it first.

Then the passage says something that surprises most first-time readers:

The first stage of Avastha Paka

sa āhāraḥ ṣaḍraso'py āmāśaye mādhuryaṁ labhate |

"That food, though of six tastes, attains sweetness in the Amashaya."

Whatever you ate — bitter, pungent, salty, astringent, sour, sweet — the mixture in the upper stomach becomes madhura, sweet in quality. This is the first of the three stages the classical texts call Avastha Paka, the stagewise transformation of food. And the reason the text gives is internally consistent rather than arbitrary: the Amashaya is the seat of Kapha, Kapha is itself sweet by nature, and the local quality dominates.

To back this up the text quotes the standard description of Kapha's own qualities:

The nature of Kapha — Bhavaprakasha, Purva Khanda

śleṣmā śveto guruḥ snigdhaḥ picchilaḥ śītalas tathā |
tamo-guṇādhikaḥ svādur vidagdho lavaṇo bhavet ||

"Kapha is white, heavy, unctuous, slimy and cold; predominant in the quality of Tamas; sweet in taste — and when scorched, it becomes salty."

That last clause is the one to hold on to. Vidagdha — scorched, over-heated, half-burnt — changes the taste. The text is telling you that these substances have a normal state and an altered state, and that heat is what moves them between the two. The same passage adds that the mixture takes on a frothy character from the heat of the Jatharanala, the belly-fire. Froth is exactly what you see on a pot that has come up to temperature.

Which is the cue for the fire itself.

Jatharagni: Vagbhata's Cooking Pot

Bhavamisra now hands the microphone to Vagbhata, and quotes the verse that gives this entire model its shape:

"Kindled by Samana, the belly-fire cooks what is lying in the Amashaya — just as an external fire cooks the rice and water standing in a pot."

Look at how much work that single line does. It names four things and maps each one:

  • Sthali, the pot — the Amashaya.
  • Toya, the water — the moisture supplied by Kledaka Kapha.
  • Tandula, the rice — the food itself.
  • Audarya agni, the belly-fire — Jatharagni, seated in its own compartment below.

And then the fifth element, the one that makes the simile complete: sandhukṣitaḥ samānena, "kindled by Samana." Samana Vayu is the draught. A fire without air does not burn, and anyone who has fanned a chulha knows that the air supply, not the fuel, is usually what decides whether the pot boils. The text has thought about this and given the air its own agent.

Why the simile is good science, not just good writing. A metaphor is decorative if it stops at resemblance. This one keeps working after you push on it. Too little fire and the grain stays raw. Too much and it scorches. Too much water and it will not thicken. Not enough draught and the fire dies under a full pot. Every one of those failure modes has a counterpart in the classical descriptions of disordered Agni — which is exactly what you would expect from a model built by someone who actually cooked.

It is worth being clear about what Agni means in these texts, because the English word "fire" carries associations that mislead. Agni here is a functional principle: the body's capacity to transform one substance into another. Jatharagni is the master instance of it, sitting at the stomach. Below it in scale sit the Bhutagnis, which handle the five elemental fractions of food, and the seven Dhatvagnis, one for each tissue, which handle each successive step of the chain we met at the start of this article. That is how the text gets from a pot of rice to bone marrow: the same operation, repeated at descending scales.

Pachaka Pitta and the Amla Avastha

The pot has been heated. The text now describes what heating does to the contents, and it is the second of the three stages:

The second stage of Avastha Paka — Bhavaprakasha, Purva Khanda

atha pācaka-pittena vidagdhaṁ cāmlatāṁ vrajet |

"Then, scorched by the Pachaka Pitta, it goes on to sourness."

The sweet mass turns amla, sour. The agent is Pachaka Pitta — literally "the cooking Pitta", the first and chief of the five Pittas, seated between the Amashaya and the Pakvashaya. Its name is the verb.

The Amla Avastha: the middle stage, where the classical texts say the mixture turns sour.

The observation is a good one. Anyone who has left cooked food standing warm knows it turns sour before it turns anything else, and any reader in a pre-refrigeration household would have known it intimately. A sixteenth-century physician working out what happens in a warm, moist, closed vessel had every reason to expect sourness, and said so.

The text then explains what moves the mixture along. The food, it says, is driven by the Vayu named Samana — which is seated at the region of the navel — from the Amashaya onward. Samana appeared a moment ago as the draught that kindles the fire; here it is also the agent of transit. One named agent, two related jobs, both of them about keeping things moving in the middle of the body.

Grahani: the Sixth Kala

The last named structure in the passage is the one with the most interesting definition. The heading in the text is simply Grahani Lakshana — "the description of the Grahani":

ṣaṣṭhī pitta-dharā nāma yā kalā parikīrtitā |
āma-pakvāśayor madhye tasyāṁ grahaṇī sābhidhīyate ||

"The sixth Kala, called Pittadhara, which is declared to lie between the Amashaya and the Pakvashaya — that is what is termed the Grahani."

Grahani: not an organ so much as a boundary — the sixth Kala, defined by what lies on either side of it.

Three things are packed into that verse.

First, it is a Kala. The Kalas are the seven membranes or interfacing layers described in classical anatomy, each lying between a tissue and the space it borders. Calling the Grahani a Kala rather than an organ is a deliberate choice: it is being defined as an interface.

Second, it is Pittadhara — "that which holds Pitta." The commentary spells this out: the Pittadhara Kala holds the Pachaka Pitta, which is the seat of the Agni. So the Grahani is the floor of the cooking vessel, the surface on which the fire acts.

Third, it is defined by position — between the Amashaya and the Pakvashaya, between the receptacle of the uncooked and the receptacle of the cooked. It is a threshold.

The name itself is the clearest clue. Grahani comes from the root grah, to seize or to hold. It is "the holder" — the structure whose job is to retain food long enough for the cooking to finish before letting it pass. Give a modern physiologist that description and they would recognise the functional idea immediately.

Past the Grahani, in the Pakvashaya, the mixture enters the third and final stage of Avastha Paka and turns katu, pungent. Sweet, then sour, then pungent — three stages, three places, three agents. The passage closes with the line that the food is cooked in the Grahani, in the Koshtha, by the fire.

Three stages, and one dosha presiding over each — in the order Kapha, Pitta, Vata. The scheme is tidy because the texts made it tidy; it is a teaching model as much as an observational one.

Agnimandya: What the Texts Mean by "Weak Agni"

If Agni is a fire under a pot, then the obvious next question is what the texts say when the fire is not behaving. The Sanskrit term is Agnimandya — from manda, dull or slow. Literally: dullness of the fire.

It is a term worth understanding precisely, because it is often translated loosely into English as "poor digestion", which flattens it. In the classical scheme, Agni is not simply strong or weak. Charaka Samhita Chikitsa Sthana chapter 15 — the Grahani Dosha Chikitsa, the compendium's principal chapter on this whole subject — sets out four states, and only one of them is the good one:

So Agnimandya names one specific corner of a four-cornered model — the Kapha-associated one, the slow fire under a full pot. That is a considerably more precise idea than "poor digestion", and it is the reason the classical literature does not treat every digestive complaint as the same thing.

The related concept is Ama, from the same root as Amashaya: ama means raw, unripe, uncooked. In the texts, Ama is what results when the cooking does not complete — the residue of an unfinished process. Given the model, that is precisely the term you would expect the system to generate. Pull a pot off the fire too early and what you have is not food and not waste; it is something in between, and it needs its own name.

Please read this carefully. Agnimandya, Grahani disorders, Ama and Amlapitta are terms belonging to a classical medical literature written between roughly two thousand and four hundred years ago. They appear on this page purely as objects of scholarly description. They are not modern diagnoses, they do not map cleanly onto modern conditions, and nothing in this article is medical advice or a description of any product's effect. What the fourfold scheme does show is how systematic the reasoning was. Having established a mechanism with named parts, the texts then asked what happens when each part misbehaves, and gave each answer a name. A Short Glossary of the Sanskrit in This Passage

The passage moves quickly and assumes its reader already knows the vocabulary. Here is every term it uses, in the order the argument needs them, with the literal sense of each word alongside the role it plays. Reading the literal meanings in a column like this makes one thing obvious: almost every name in this system is a job description.

A note on reading Sanskrit medical vocabulary. If a term looks impenetrable, try splitting it and translating the halves. Ama-ashaya is "raw-seat". Pitta-dhara is "Pitta-holder". Agni-mandya is "fire-slowness". Kledaka is simply "the one that wets". The compendia were written to be memorised and recited, so the names had to carry their own definitions — which means a reader who knows a handful of roots can decode a great deal of the vocabulary without a dictionary.

What This Chapter Is Not

A closing note on how to read all of the above, because it matters.

The Bhavaprakasha passage is a piece of sixteenth-century theoretical physiology, resting on a doshic framework and a set of observations made without instruments. Some of it is strikingly good: the placement of the stomach between navel and breasts, the insistence that food is moistened and broken up before it is transformed, the recognition that a boundary structure holds material until processing is complete, the whole idea of transformation happening in ordered stages with distinct chemistry at each. Some of it belongs firmly to its own intellectual world and does not translate.

Both of those things can be true at once, and the honest way to read a classical text is to let them be. Nothing here is a diagnosis, nothing here is a protocol, and nothing here describes what any product does.

The passage above sorts what people consume into six classical forms — Bhojya, Bhakshya, Charvya, Lehya, Choshya and Peya. That classification is a genuinely useful way to introduce three of our own traditional preparations, because each one belongs to one of the categories the text names. What follows is about form and tradition only.

Chyawanprash — a classical Lehya

Chyawanprash is an avaleha: a thick, spoonable preparation, which is exactly the Lehya form the passage names as one of the six. What is Jatharagni in Ayurveda? +

Jatharagni is the classical Sanskrit term for the digestive fire seated at the belly — jathara meaning belly and agni meaning fire. In the Bhavaprakasha's Purva Khanda it is described through a simile borrowed straight from the kitchen: kindled by Samana Vayu, the belly-fire cooks what lies in the Amashaya just as an external fire cooks rice and water standing in a pot. In the classical scheme Jatharagni is the master fire of the body, with the five Bhutagnis and the seven Dhatvagnis working below it at smaller scales. It is a functional principle — the capacity to transform one substance into another — rather than a literal flame or any single anatomical organ.

What does Agnimandya mean? +

Agnimandya is a compound of agni (fire) and manda (dull, slow), so it means dullness or slowness of the digestive fire. It is more precise than the loose English rendering "poor digestion". Charaka Samhita Chikitsa Sthana chapter 15 describes four states of Agni: Samagni, the even and normal state; Vishamagni, irregular, associated with Vata; Tikshnagni, over-sharp, associated with Pitta; and Mandagni, dull, associated with Kapha. What is the Grahani according to the Bhavaprakasha? +

The Bhavaprakasha defines it in a single verse: the sixth Kala, called Pittadhara, lying between the Amashaya and the Pakvashaya, is what is termed the Grahani. Three ideas are packed in there. It is a Kala — one of the seven interfacing membranes of classical anatomy — rather than an organ, so it is defined as a boundary. It is Pittadhara, "the holder of Pitta", because it carries the Pachaka Pitta that is the seat of the Agni. And it is positioned between the receptacle of uncooked food and the receptacle of cooked food. The name comes from the root grah, to hold or seize: it is the structure that retains food long enough for the cooking to finish.

What are the six kinds of food (Shadvidha Ahara)? +

The Bhavaprakasha lists them as Bhojya, Bhakshya, Charvya, Lehya, Choshya and Peya. The commentary's examples show that the classification is by physical form and by what the mouth does with it, rather than by ingredient: Bhojya covers the soft staples of a meal such as cooked rice and dal; Bhakshya the dense formed sweets such as modaka; Charvya the things that must be chewed, such as flattened or parched grain; Lehya the thick spoonable preparations that are licked; Choshya fruits and cane, which are sucked; and Peya prepared drinks and milk. What is Kledaka Kapha? +

Kledaka Kapha is the subtype of Kapha seated in the Amashaya, and its name states its function: kleda means moisture, so Kledaka is "the moistener". The Bhavaprakasha describes it doing two mechanical jobs — it wets the food, and it breaks apart the compacted mass (samhanana). Where does the Bhavaprakasha say the Amashaya is? +
